Join us for a week-long mushroom cultivation workshop at Re-Green Eco Culture Center, located ​in the mountains of the northern Peloponnese. This course will be led by mushroom enthusiasts, ​growers and facilitators Nikolaos Gryspolakis, Charitini Paidi and Emily Antoniadi. If you want to ​learn about fungal ecology and applications, gain holistic skills in working with fungi, and use ​Permaculture principles and tools to design your mushroom cultivation, this course is for you.

Themes of the week:

  • Intro to Fungi - Ecology, history, human applications and current research
  • Lab Setup - equipment, materials, workspaces and skills
  • Mushroom Growing rooted in Permaculture - integrating the Ethics, Principles and Tools into ​everything we do
  • Mushroom mycelium and spawn propagation
  • Preparing substrates
  • Fruiting with the seasons and creating a fruiting chamber
  • Indoor and outdoor methods


Extra sessions on request:

  • Forest walk for local medicinal and other fungi: focusing on building experience and learning
  • Intro to Functional Mushrooms
  • Arbuscular Mycorrhiza propagation
  • Building fungal-dominant soils
  • Culturing local wild mushrooms


This course will be held in English but Greek translation will be available.

Olive tree trimmings (branches and leaves) are abundant ​in Greece and other mediterranean regions, and are often ​burnt in the fields after pruning season, contributing to ​unneccessary emissions and air pollution*. On this course ​we will learn how to use this material to grow high-quality, ​nutritious mushrooms.

Ελάτε μαζί μας για ένα εργαστήριο καλλιέργειας μανιταριών διάρκειας μιας εβδομάδας στο ​Κέντρο Αεικαλλιέργειας Re-Green, που βρίσκεται στα βουνά της βόρειας Πελοποννήσου. Το ​σεμινάριο αυτό θα καθοδηγηθεί από τους λάτρεις των μανιταριών, καλλιεργητές και εμψυχωτές ​Νικόλαο Γρυσπολάκη, Χαριτίνη Παίδι και Έμιλυ Αντωνιάδη. Αν θέλετε να μάθετε για την ​οικολογία και τις εφαρμογές των μυκήτων, να αποκτήσετε ολιστικές δεξιότητες στην εργασία με ​τους μύκητες και να χρησιμοποιήσετε τις αρχές και τα εργαλεία της Αεικαλλιέργειας ​(Περμακουλτούρας) για να σχεδιάσετε την καλλιέργεια μανιταριών σας, αυτό το σεμινάριο είναι ​για εσάς.
















Καλλιέργεια Μανιταριών σε Κλαδέματα Ελιάς

Τα κλαδέματα των ελαιόδεντρων (κλαδιά και φύλλα) είναι άφθονα στην Ελλάδα και σε άλλες ​μεσογειακές περιοχές και συχνά καίγονται στα χωράφια μετά την περίοδο κλαδέματος, ​συμβάλλοντας στις περιττές εκπομπές και τη ρύπανση του αέρα. Στο σεμινάριο αυτό θα μάθουμε ​πώς να χρησιμοποιούμε αυτό το υλικό για να καλλιεργήσουμε υψηλής ποιότητας, θρεπτικά ​μανιτάρια.

Το σεμινάριο θα διεξαχθεί στα αγγλικά, αλλά θα υπάρχει διαθέσιμη μετάφραση στα ελληνικά.

Θέματα της εβδομάδας:


-Εισαγωγή στους Μύκητες - Οικολογία, ιστορία, ανθρώπινες εφαρμογές και τρέχουσα έρευνα

-Δημιουργία Εργαστηρίου - εξοπλισμός, υλικά, χώροι εργασίας και δεξιότητες

-Καλλιέργεια Μανιταριών βασισμένη στην Περμακουλτούρα - ενσωμάτωση των Ηθικών, Αρχών ​και Εργαλείων σε όλα όσα κάνουμε

-Αναπαραγωγή μυκηλίου και σπόρων μανιταριών

-Προετοιμασία υποστρωμάτων

-Καρποφορία με τις εποχές και δημιουργία θαλάμου καρποφορίας

-Μέθοδοι εσωτερικού και εξωτερικού χώρου

Meet

the Facilitators!

Nikolaos Gryspolakis, Free Field

Nikolaos was brought up around nature but aged 19 travelled to study electronic engineering in the urban environments of Glasgow and Montreal. During his PhD in photonic systems he discovered the magical worlds of fungi and permaculture, becoming involved in environmental movements and foraging, cultivating and experimenting with mushrooms for food, soil remediation and regeneration. He has facilitated numerous workshops in Canada, Palestine, South Africa and Greece, and since 2016 he has been designing and planting farms around Greece, including the FreeField (Ελευθεροχώραφο).

Charitini Paidi

Charitini was brought up in Athens and studied Crop Science, specialising in Environmental Science and Plant Health. She made her thesis on monitoring the Mycodiversity in protected areas of West Crete. Lately, she has been working as an assistant in research and in the field as an agronomist, exploring collective organic farming, creating new products for food and medicine. Extremely fascinated by the world of Fungi, she will share her knowledge and experience on practicing small-scale diy cultivation at home and outdoors.


Emily Antoniadi, ​Mycorama

Emily is a British-Greek ​strategist and facilitator, fungi ​grower and founding member ​of the Doughnut Economics ​Greece Network. Her project, ​Mycorama, explores the ​potential of fungi to support ​healthy ecosystems, ​communities and economies, ​and received the LUSH ​Spring Prize 2023. Emily has ​studied and applied ​Permaculture design ​practices, mushroom ​cultivation, and the healing ​potential of medicinal ​mushrooms, and designed ​and co-ran several adult ​education programmes ​focused on regenerative ​economies and practices.

Re-Green Eco Culture Center


Re-Green is a beautiful, abundant Permaculture Farm & Eco Culture Centre in the Ziria mountain range of the Peloponnese (www.re-green.gr).


Re-Green was founded on the principles of working with nature rather than against it; providing a place for experiential learning where people can retreat and discover ways to regenerate both the planet and themselves.
